Cody & I started the 21 Day Fix last week, so sadly, I chose not to attend brunch this past Sunday. However, that does not mean I didn’t brunch so hard. We decided to make our own brunch feast at home…in a healthier, more portion controlled way.
I started by making a loaf of Legit bread. Legit bread is paleo/nut free/dairy free/gmo free/grain free/gluten free, & you can purchase a package of mix for $6.99! To make, you need 7 large eggs, 1/3 cup of honey (I was out, so I used maple syrup instead), 3 TBS of olive oil, & 1 TBS of apple cider vinegar. Blend the wet ingredients in a blender, then slowly add bread mix. Pour into a bread tin, & bake for about 40 minutes at 350 degrees.
Once the bread was baked, I let it cool down, sliced it up then spread 1 teaspoon of peanut butter, & topped with banana slices.
I cooked Jennie-O lean ground turkey, & added a mix of spices we found in the 21 Day Fix eating plan. The spice mix included 4 tsp of onion powder, 2 tsp garlic powder, 2 tsp mustard powder, 1/4 teaspoon of thyme, 1/4 ground black pepper, 1 tsp salt. We also cooked two eggs over easy to top the ground turkey with. Best thing about the 21 Day Fix eating plan, is I can load anything with as much hot sauce as I want, so I did just that.
For my sweet tooth, I had a serving of Light & Fit Greek yogurt topped with mixed berries & cinnamon.
